Braised Balsamic Chicken

Ingredients
- 4 skinless, boneless chicken breast halves
- Freshly-ground black pepper to taste
- 1 tsp garlic salt
- 2 tbsp olive oil
- 0.5 cup balsamic vinegar
- 1 14.5-oz can diced tomatoes
- 1 onion, thinly sliced (optional)
- 0.5-1 tbsp fresh garlic, diced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried rosemary
- 0.5 tsp dried thyme
Directions:
- Season chicken breasts with black pepper and garlic salt.
Place large stainless steel skillet over medium-high heat.
Add the olive oil and brown the chicken breasts (3-5
minutes per side). Remove chicken to a plate and cover
loosely with aluminum foil.
- Add balsamic vinegar to the skillet and raise heat to
high. Scrape the bottom of the skillet with a wooden spoon
to bring up all cooked-on pieces of meat from the bottom of the
skillet.
- Reduce heat to medium. Add onion and cook until browned.
- Reduce heat to low. Return chicken to the skillet and
pour diced tomatoes over chicken. Add onion, garlic, basil,
oregano, rosemary and thyme to skillet. Simmer until chicken
is no longer pink and juices run clear, about 15 minutes.
