Buttermilk Cornbread

Ingredients
- 1/4 pound (1 stick) unsalted butter
- 2/3 cup white sugar
- 2 eggs
- 1 cup buttermilk (I had good luck with 1% low-fat)
- 1/2 tsp baking soda
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/2 tsp salt
- 1/4 cup honey (optional)
Directions:
- Preheat oven to 375°F/175°C. Grease an 8x8 inch
baking pan with non-stick spray or butter
- Melt butter in a medium saucepan over medium heat.
Remove from heat and stir in sugar. Quickly add eggs
and beat until well blended. Add buttermilk and
baking soda, mixing well. Stir in cornmeal,
flour and salt until blended and few lumps remain.
Pour in honey and mix until honey is thoroughly
mixed. Pour batter into the greased pan.
- Bake in the preheated oven for 30-40 minutes or until
a toothpick inserted in the center comes out clean.
