Quick Chicken Teriyaki

Ingredients
- 1 tbsp oil
- 4 boneless skinless chicken breast halves, cut into 1/2"
thick slices
- 1.5 cups water
- 1/2 cup teriyaki sauce
- 1/2 tsp garlic powder or 1/2 tbsp minced fresh garlic
- 2 cups instant brown rice, uncooked
- 2 cups broccoli florets
- 2 red peppers, sliced into medium strips (optional)
- 1/2 cup carrots, sliced (optional)
- 1/2 cup unsalted peanuts or cashews (optional)
- 1/2 tbsp crushed red pepper flakes (optional)
Directions:
- Heat oil in large (3 quarts or greater) nonstick skillet on
medium-high heat. Add chicken and cook 5-7 minutes or until
cooked through, stirring frequently.
- Add water, teriyaki sauce and garlic. Stir until well
mixed. Bring to a boil.
- Stir in rice, broccoli, peppers, carrots, nuts and
pepper flakes. Cover skillet and simmer on low for 5 minutes.
Remove from heat but keep covered. Let stand 5 minutes. Fluff
with a fork and serve immediately.
